18回目のゲストは、麻婆豆腐のお店「かかん」の代表、小嶋章太さん。幼少期から既存の社会の枠組みに縛られない環境で育ち、自然な流れで飲食の世界へ。2000年初頭のカフェブームの真っ只中に立ち上がった「DEXEE DINER」の立ち上げに参加したことを皮切りに、目黒の伝説的なホテル「クラスカ」や七里ヶ浜の「bills」など、当時カルチャー起点になったお店の立ち上げに関わってきた小嶋さん。正社員として責任ある立場を経験する中で、やっぱり社会の枠組みには馴染めないと会社をやめ、30歳を迎える直前に鎌倉にお店を開くことに。本人曰く「社会からの逃げの独立」と言う言葉が印象的でした。逃げたからこそ逃げられなくなった。手探りで目の前の課題に向き合う中、見つけ出した麻婆豆腐というカテゴリー。現在は、麻婆豆腐のかかんを広げるために、代表として、経営者としてチャレンジを続けています。起業や独立は目的ではなく、生きる手段の一つ。社会に合わなければ、起業という選択肢もある。そんな希望を与えてくれるインタビューです。小嶋章太
